Is there any way to get the 2.3 taskbar? Hopefully in a flashable .zip?

It worked fine for me. The Gingerbread keyboard I flashed before didn't work any more. If you have this problem as well, just flash the gingerbread keyboard again, after flashing the gingerbread theme.
UPDATE:
You have to pick the G2 version of that theme, of course
I corrected the link I posted which now directs to the G2 version of that theme (no N1 anymore)

Oh, yeah, I did give one flashable theme a shot, but took away ADWLauncher. i remember back in the day with CM4 and CM5, there was a flashable taskbar. I changed the taskbar color via cm settings. I guess I could flash that and then put ADW back in. Didn't think of that. thanks

All I did was open up Android Commander and delete the old Gmail.apk and copy the new one over to /system/app I didn't even touch Gmail.odex
Edit: I guess it's just the regular gmail, but colored

Don`t know if a nexus one version exist.
If you flash to nexus one,maybe you get a bootloop,because
difference at framework-res etc.!
Otherwise,test it.
