Hello,
I recently flashed my stock Nexus One (which was on Gingerbread at the time) to CM 7.0.3-N1. Since the upgrade, I have been experiencing seemingly random device freezes.
It always happens when the screen is off. When it happens, the device simply doesn't respond to the power button, or any other button press, charger, etc. My only recourse is to pull the battery.
The frequency is all over the place. On some days, it'll happen 3 or 4 times. I've also gone several days in a row w/o incident, though.
I have the stock 5.08.00.04 radio. I've experimented with disabling WiFi, GPS, mobile data, Bluetooth, and sync, all with no definitive results (happens in all configurations).
Any idea what's going on? I have ADB. Is there something like /var/log/messages that might give me some hints as to what is going on?

I would try running 7.1.0. It is the latest stable release and includes a ton of bugfixes and new features/enhancements.
But with logfiles, it can be hard when it is frozen vs rebooting. You can try and see if adb still runs when it freezes. If it does, you can get the log by typing logcat > log.txt. If it happens to do a hard reboot (soft reboots just go back to the CM logo and the logcat works great, hard reboots go to the colored X), you can check /proc/last_kmsg to see the kernel log.

I have the same problem with my Nexus One (AT&T frequencies), using both 7.1RC and 7.1 final.
I only seem to have the problem in weak signal areas. It will repeatedly happen in the same locations (the track where I jog, going into an elevator, at the poolside while vacationing in Maui). It never happens at home or any area where I have a good signal, and it doesn't matter if the screen is on or off.
I have the 5.08 radio flashed.

Have you tried wiping the /system partition and reinstalling CM and gapps? Amon_RA doesn't give you that option, so you would need to flash a zip that will wipe it for you. Temasek has one in his mediafire folder http://mediafire.com/tesmasek
