Can't the Google Apps Zip to install via clockwork, says it is installed but they don't show up at all, anyone else have any luck?

Did you flash the new CWM via RomManager on your phone as soon as you installed CM7? This made gapps work for me.

No, just followed the wiki instructions and installed through clockwork recovery
