I experience the exact problem too.

I read this somewhere on the internet, sorry I canno tremember to give credits).

Switch to airplane mode. Go to Wifi, turn on and delete all saved network connections. Then disable airplane mode and it will see the networks and connect normally.

I tried this solution and it seem to fix the problem!
Before this mod very often I had to go in the wifi setting to complete the connection. With that I only hit the wifi button on the homescreen.

I'll chip in for you guys although I responded on another thread: this problem seems to have gone away on my Defy at about the time I updated to de CM7.2RC, I am now on CM7.2RC3 and running the latest nightlies and have not seen the stuck wi-fi issue for a while. This is not to say it's perfect, sometimes I get weird disconnects or some access points won't let me connect for a while, but it is at least reasonably usable again. Now if only I could get it to work on channel 14…
