New To Cyanogen Need Some Help With The Finer Tweaks (Gmail, Default Apps, Keyboard Layout)

Hey everyone I'm new to Cyanogen and it transformed my motorola bravo MB520 to a machine! Less lag, beautiful display. I want to mod it a little more and have a few questions that DONT have to do with my phone but to do with Cyanogen.

1. How can I make GO Dialer, GO SMS and GO contcats my default options for the icons on the bottom of the screen? Usually on FROYO 2.2.1 I would have an option pop up to choose the default program or go into settings and do it, I dont see that in cyanogen.

2. How can I change my keyboard layout? I notice that the default cyanogen keyboard keys are much smaller than the normal keyboard and would like to resort to the default Froyo keyboard. Any reccomendations for a keyboard like that?

3. I also like the older gmail. The one on Froyo is kind of clunky, and slow feeling. the googleapps one also has the advantage of only showing (vs only syncing) certain labels which is convenient. Any idea on how I would resort back to this, stylitically?
